I made beer cupcakes on Saturday for my Brother's birthday. They turned out way better than I thought. I was expecting these to be more of a novelty baked good than a yummy-I-want-to-eat-them-all cupcake.

I got this recipe from
Big City, Little Kitchen. I accidentally left out a tablespoon of butter, kind of an oversight. I don't know if it would have made a huge difference with or without that tablespoon, but the cupcakes where very thick and rich. Very yummy.
I did, however modify the frosting a little. Instead of milk, I used Guinness! It was really good. Since the cupcakes tasted more like a rich chocolate cupcake and less like beer, I wanted to add a little of the beer flavor to it. It worked. These are great, not too sweet or heavy but perfect as little cupcakes. I had to top them with chocolate jimmies to make them pretty. Everyone loved them especially my brother.
Now that I think about it, I used Guinness Extra Stout instead of the regular draught. I also don't know if this makes a difference either. Next time I make them I'll use draught and let you know.
