Mint Chocolate Chip Cupcakes


Back by popular demand, I made mint chocolate chip cupcakes with chocolate frosting yesterday. My sweetheart isn't big on sweets but these he loves. I love topping them with the Mint Drops.

MINT CHOCOLATE CHIP CUPCAKES
Ingredients
1 1/3 cups all-purpose flour
1/4 teaspoon baking soda
2 teaspoons baking powder
3/4 cup unsweetened cocoa powder
pinch of salt
3 tablespoons butter, softened
1 1/2 cups white sugar
2 eggs
3/4 teaspoon peppermint extract
1 cup milk
1/2 cup mini semi-sweet chocolate chips

Directions
1. Preheat oven to 350 degrees. Sift together the flour, baking powder, baking soda, cocoa and salt. Set aside.
2. Cream together the butter and sugar. Add eggs one at a time, stir in vanilla. Add the flour mixture alternately with milk. Fill muffin cups.
3. Bake 15 - 17 minutes.

Top with chocolate frosting or white frosting with a little peppermint extract for more minty goodness.
